This Reglamento exists because a kitchen without rules is a kitchen with excuses. The following is placed on record.
- I.The kitchen is German. It is in San Blas, Nayarit, from October to March. From May to August it is in Bariloche, Río Negro. It follows the winter.
- II.The Chef cooks. He learned to make sausage in a village of 900 people with four butcher shops. He brought the machine.
- III.Everything is made in this kitchen. The sausage is ground and stuffed here. The sauerkraut ferments here. The mustard is made here. Nothing is bought ready-made.
- IV.The menu has 18 articles. Never more, never fewer. A new article requires repealing an existing one.
- V.The rules come from the Europe of 1945. Nothing is thrown away. Cheap cuts are cooked slowly. It has to taste good.
- VI.There is no restaurant. There is a bicycle, an Inspector and 30 minutes. Live music is reserved for when a restaurant exists.
- VII.Everything is written as law so nothing has to be argued. The answer to any question is an article.
- VIII.The Chef does not smile in photographs. Company policy.
